Breaded Asparagus – Deep Fried

    Ingredients

Asparagus
2 Eggs
Garlic Powder
Seasoning Salt
White Flour
Bread Crumbs (Panko if no bread crumbs available)

    Directions

1. Wash and dust asparagus with white flour – set aside.
2. In a bowl add 2 eggs, a splash of water. Beat mixture well.
3. Add Garlic Powder and Seasoning Salt to egg mixture.
4. Soak or dip the dusted asparagus in egg mixture and then roll or cover with bread crumbs.
5. Set aside or in fridge for 10 minutes which allows coatings to stick.
5. Deep fry until golden brown and serve immediately with dipping sauce….Mangiare!

    Dipping Sauce

There are many options or variations for dipping sauce. Try 1 cup of mayonnaise with some hot chili sauce and Tabasco…..fold together in bowl and serve. Some like the sweet chili sauce or finely diced green chili peppers.

Teriyaki Salmon Marinade

For all you fish lovers, here is a fantastic marinade for your salmon courtesy of our friend and executive chef, Rick Gabel.

Ingredients

1 cup light soy sauce – Kikkoman

1 cup dark soy sauce – China Lily

2 cups brown sugar

1 tbsp chopped fresh garlic

1/2 tbsp chopped fresh ginger

 

Directions

  • Stir ingredients into a saucepan and bring to boil
  • Cool completely
  • Marinate salmon fillets for at least 4 hours, turning occasionally
  • Remove from marinade
  • Bake or Grill as desired
  • Combine 2 parts sesame oil, 1 part lemon juice and 1 part honey
  • Whisk and brush over cooked product to glaze

 

Gravy, Turkey

2 cups turkey juice
1/2 cup flour
1 tbsp beef boullion
pepper and salt

Directions

  • in your pot add approximately 2 cups of turkey juice. Stir in about 1/2 cup flour until there are no lumps.
  • remove the gravy fat
  • add potato or carrot water until gravy consistency is met
  • add 1 tbsp beef boullion powder
  • pepper and salt to taste

I know what you are thinking…Italians cannot make gravy. Mamma’s gravy recipe is a keeper, which she perfected during the 30 plus years experience running a commercial kitchen !  Mangiare!
