Eggplant Parmigiana – Zia Maria
If you like eggplant or if you are trying to like it for its nutritional benefits, this recipe for eggplant parmigiana from our Aunt Maria will help get you hooked and make it easy to add this vegetable to your diet.
Warning: This plate is quite rich, cheese, cheese and more cheese…and remember the eggplant is fried so the calorie count might be higher than a chicken salad.
Ingredients
2 medium sized eggplants
3 large eggs
10 slices of mozzarella cheese
4 slices of ham
Flour
Spaghetti or tomato sauce
Oil for frying
Directions
Preheat oven to 350 deg F. and heat oil in pan for deep frying.
Peel eggplant. Cut down middle from head to toe (both halves should be same size or look the same). You should get about 4 slices from each 1/2 of the eggplant.
Beat or whip eggs in bowl big enough to accommodate the slices . Dunk or place each slice of eggplant into the egg mixture, coat with flour and deep fry in hot oil until golden brown. Set aside and let cool.
Now start to layer your eggplant parmigiana. Eggplant, spoon of spaghetti sauce, slice mozzarella cheese, eggplant, sauce, slice ham, mozza, eggplant, sauce, mozza, eggplant, cheese. Notice we started and finished with eggplant and used only one slice of ham in center. You can arrange it according to your own taste and you can consider adding some Romano cheese.
Place in baking dish and bake at 350 degrees until cheese is melted and ingredients are heated. 15-20 minutes.
Cheese will melt and will help hold it all together….Mangiare!

This has to be one of the simplest Italian recipe that I have seen. Not to mention that it was delicious. I love Italian Recipes, between the cheese and the sauce what is not to like! I work with Better Recipes and of all the recipes I review on a daily basis I think that Italian recipes are by far my favorite.
